Ingredients

  • 1 1/2 tsp cumin seeds
  • 2 cans black beans drained and rinsed
  • 1 can corn drained and rinsed
  • 1 red bell pepper minced
  • 1/2 red onion minced
  • 1/2 cup parsley chopped
  • 1/2 cup cilantro chopped
  • 1/3 cup freshly squeezed lime juice
  • 1/4 cup extra virgin olive oil
  • 3 cloves garlic minced
  • 1/2 tsp sea salt
  • 1 tsp crushed red pepper flakes
  • 1/2 tsp freshly cracked black pepper

Instructions

  • Toast the cumin seeds in a skillet over medium heat for 1 to 2 minutes, until browned and fragrant, stirring often.
  • Combine cumin seeds with remaining ingredients; toss well.
  • Serve immediately with tortilla chips, or cover and store in the refrigerator for 3 to 5 days.
