Vegan Chicken Seasoning (Broth Powder Recipe)

This vegan chicken seasoning is like magic pixie dust. It’s great sprinkled on or mixed into anything that needs a savory flavor boost. It gives all the addictively umami notes that the plant-based community has come to love in nutritional yeast, plus flavors of celery, onion, garlic, paprika, and herbs. You’ll love this vegan chicken broth powder because it’s:

  • A cheaper alternative to store-bought vegan chicken broths or bouillon cubes
  • Versatile, acting as a dry rub, broth powder, or topping for virtually any savory dish

What Makes Vegan Food Taste Like Chicken?

Chicken flavor is, at its core, umami. If you want your vegan food to taste meaty, when in doubt, add an umami ingredient. For chicken, lighter umami flavors like white miso, mushrooms, and nutritional yeast are good. For beef, darker umami ingredients like soy sauce or tomato paste do the trick.

This vegan chicken seasoning is packed with nutritional yeast to give it a good umami base, but it doesn’t stop there. It adds celery seeds and onion powder (along with a handful of other spices) to mimic classic mirepoix flavors that are commonly paired with chicken (such as in broth).

How To Use This Vegan Chicken Seasoning

There are so many ways to use this seasoning. Here are some of my go-to methods:

Stir it into soups. The method I use most often is stirring the powder into soups as a bouillon powder. It acts as a plant-based chicken broth, and it’s much easier and cheaper than trying to find a store-bought one.

Use as a dry rub for tofu or tempeh. If you prefer tofu or tempeh over vegan chicken products, add this seasoning powder for an extra punch of savory chicken flavor.

Mix into homemade seitan. If you make your own seitan-based chicken, add this powder into your dry mix. Your finished cutlets will taste just like chicken!

You can use this seasoning for any recipe on this blog that calls for vegetable broth or vegan chicken broth. Try it in my smoky sausage, potato, and corn chowder, for example.

Vegan Chicken Seasoning

Use this blend of spices and seasonings any time you want to pack a punch of plant-based chicken flavor. Marinate tofu, stir into soups, and more! This recipe is largely inspired by The Herbivorous Butcher's chicken broth powder, with some modifications.

Ingredients
  

  • 2 cups nutritional yeast flakes
  • 1/4 cup onion powder
  • 1/4 cup salt
  • 2 tbsp granulated garlic
  • 1 1/2 tsp paprika
  • 1 1/2 tsp dried parsley
  • 1 1/2 tsp dried thyme
  • 1/2 tsp ground sage
  • 1/2 tsp celery seed
  • 1/2 tsp ground turmeric

Instructions
 

  • Whisk together all ingredients in a bowl.
  • Store in an airtight container at room temperature for up to 6 months.

Notes

If you need a finer chicken powder (if you don’t want to see larger particles of herbs, etc.), you can blitz the mixture in a blender or a food processor.
